Zucchini Zoodles with Avocado Garlic Sauce

 Avocado Garlic Sauce

(serves 2)


1 avocado, ripe, peeled, and pitted

1 small garlic clove, peeled

2 tbsp fresh lemon juice (½ lemon)

1 tbsp olive oil

¼ cup fresh basil leaves

sea salt and pepper, to taste


  1. In a food processor, add basil and garlic. Blend to a fine consistency.
  2. Add the avocado flesh, olive oil, and lemon juice. Blend until smooth.
  3. Season with salt and pepper to taste.
  4. Toss and serve with zucchini noodles.
