Summer Glow Salad

Summer’s bounty is flowing! This Summer Glow Salad is a nutrient-dense vegan meal from Kate at Vegukate. With a Masters in Nutrition and passion for creating tasty meals, this salad showcases summer deliciousness.

Summer Glow Salad

2 cups organic baby spinach

1 ½ cups fresh organic berries (blueberries, strawberries, blackberries, raspberries)

3 tbsp. raw pumpkin seeds

2 tbsp. hemp seeds

½ bulb fennel, sliced thin

1 small avocado, sliced

2 tbsp. chopped hazelnuts

Honey Tahini Dressing

Squeeze juice of ½ lemon

1 tbsp. tahini

1 tbsp. olive oil

1 tsp. raw honey

pinch of Pink Himalayan Sea Salt

freshly ground pepper to suit your taste

  • Combine all salad ingredients in large bowl.
  • Make dressing by combining lemon juice, tahini, olive oil, honey, salt and pepper in small jar with tight-fitting lid. Shake well to combine.
  • Drizzle salad with lemon-tahini dressing, and toss to coat. Enjoy!
