Makes 20-30 bites.
¼ cup vegan chocolate chips
¼ cup dried cranberries, chopped
¼ cup walnuts, chopped
¼ cup sunflower seeds
½ cup gluten-free oats
¾ cup unsweetened coconut shreds or flakes
¼ cup ground flaxseed
¾ cup natural, unsalted, creamy almond or peanut butter
¼ cup pure maple syrup or 3 tsp. of stevia
1. In large bowl, combine all dry ingredients: chocolate chips, dried cranberries, walnuts, sunflower seeds, gluten-free oats, unsweetened coconut, and ground flaxseed.
2. Add nut butter and maple syrup or stevia. Combine well.
3. If mixture seems to dry, add a small amount more nut butter or maple syrup.
4. Roll mixture into balls, approximately 2 tablespoons per ball.
