Organic Ingredients for the Salad:
1 bunch organic beets (cubed and roasted)
½ large head red cabbage (chopped and roasted)
1 large ripe avocado
2 cups of broccoli (chopped and roasted)
4 cups of raw spinach
¼ cup of walnuts
4 tablespoons slivered fresh basil
Organic Ingredients for the Dressing:
2 tablespoons fresh lemon juice
2 teaspoons fermented apple cider vinegar (ACV)
*Important: With mother NOT pasteurized.
2 teaspoons Dijon mustard
3 tablespoons flax oil
Pink salt and freshly ground pepper to taste.
- Gently stir the lemon juice, apple cider vinegar, pink salt, pepper and Dijon mustard together. Whisk in the flax oil.
- Remove the roasted beets, cabbage and broccoli from the oven and top with pink salt and pepper.
- Peel, pit and slice your avocado.
- Place raw spinach, roasted vegetables, avocado, walnuts and dressing into a large salad bowl and mix.
- Sprinkle the basil on top and enjoy!
