Asian Tempeh Zoodle Soup

When you’re craving a warm, satisfying bowl of umami deliciousness, give this Asian Tempeh Zoodle Soup a spin. The flavors are savory, spicy, salty with a touch of tang and the satisfying slurp of nutritious zoodles are wholesome and fun! This is an excellent solution for sugar and grain free plant based diets while being vegan, keto and paleo friendly.

Organic Ingredients (marinated tempeh):

1 8-ounce package of tempeh

3 tbsp tamari

1 tsp fresh ginger, grated

3 cloves garlic, minced

1 tsp sesame oil

1 tsp apple cider vinegar

1 pinch red pepper flakes

1 tsp coconut oil

Instructions (marinated tempeh):

  1. In a shallow bowl, stir together tamari, ginger, garlic, sesame oil, apple cider vinegar, and red pepper flakes.
  2. Cut tempeh into slices; stir to coat with marinade. Marinate for 1-hour to overnight.
  3. When ready to make soup, melt coconut oil in a saucepan, and sauté tempeh over medium heat for 3 minutes per side (keep any leftover marinade for the soup).
  4. Remove from heat; set aside.

Organic Ingredients (soup):

1 tsp coconut oil

1 clove garlic, minced

4 baby bok choy, chopped

3 shiitake mushrooms, stems removed, sliced

1 carrot, grated

1 tsp fresh ginger, grated

2 tbsp miso

¼ tsp red pepper flakes

¼ tsp Chinese five spice

4 cups vegetable broth

2 cups filtered water

3 zucchini, spiralized

4 small nori sheets, sliced

2 green onions, sliced

1 tsp sesame seeds

2 tsp tamari (if needed, to taste)

Hot sauce or chili sauce (optional, to taste)

Instructions (soup):

  1. Melt coconut oil in large pot over medium heat.
  2. Add garlic and sauté till fragrant.
  3. Add mushrooms and bok choy, sauté 5 minutes.
  4. Add grated carrot, ginger, miso, Chinese five spice, vegetable stock, filtered water, and any remaining marinade.
  5. Bring to a boil. Reduce heat and simmer 15-20 minutes. Taste. Add additional tamari to taste.
  6. Spiralize zucchini and divide zoodles into 4 soup bowls.
  7. Ladle soup over zoodles. Top with nori sheet slices.
  8. Add tempeh slices, sliced green onion, and sesame seeds.
  9. Serve with hot sauce or chili sauce if you enjoy more heat.
  10. Enjoy right away and store leftovers in glass Tupperware.
